For the Web, don't save JPEGs with any icons or previews -- most UNIX webservers will strip them off even if you do, but Mac servers won't, and it just increases the file size. You also can't read the true file size using "Get Info" if the previews are attached.
To get the dialog box for the icons and previews, open the Photoshop Preferences (command-K) and go to the "Saving Files" option. Set both lists to "Ask When Saving" and you'll have the option to turn off the previews.
